What if I do not know the birth time?

Do not guess a precise birth time when the source is genuinely unknown.

Can I just use noon?

A guessed time may create a chart that looks exact even though the input is uncertain. Use the platform's unknown-time handling where available instead of treating an arbitrary time as factual.

Can I update it later?

Yes. If you later obtain a more reliable source, update the birth profile and generate a new chart. Keep the older result only if you need it for comparison or history.
